Picante sauce is a term coined by condiment maker David Pace for his
own version of salsa. Picante sauce is usually a little more pureed than
bottled salsa, but is chunkier than fresh red salsa. Picante is a
Spanish adjective that derives from picar, which means “to sting”,
referring to the feeling caused by salsas on one’s tongue otherwise
meaning spicy.
Picante is just a variety of salsa that is spicy, so salsa picante is
“spicy sauce.”
There are also sweet salsas and sour salsas but not picante.
Harpo’s Pizza dishes out Pizza Picante that is topped with
mozzarella, spicy pomodoro sauce, onions, pepper chicken, bacon and
roasted eggplant.
While pomodoro actually means ‘tomato’ in Italian and its sauce forms
the pizza base, it can be spiced up with herbs to give it added zest and
flavour. A pomodoro sauce, is a lot like the marinara sauce only it’s
thicker, but still liquidy.
It feels a lot like minced tomatoes in your mouth rather than the
chuncks you get with marinara sauce. It’s cooked a little longer so it’s
slightly darker in colour.
Pomodoro sauce is a type of Italian tomato sauce that is often served
over cooked pasta.
Like marinara sauce, pomodoro sauce is made from tomatoes, garlic,
olive oil and fresh basil. Pomodoro sauce is somewhat thicker than the
traditional marinara sauce, because it is simmered longer.
Also, the tomatoes are less chunky in pomodoro sauce, and for a
creamier sauce even crushed or pureed tomatoes can be substituted in
whole or in part for the chopped tomatoes.
However, it should be noted that while picante pizzas are varied
